01 — The roast

Roasted before the light.

Twelve kilos at a time, six mornings a week, before the doors open. Coffee is at its best in the days just after roasting, so we roast constantly and ship immediately.

The roast date is on the bag

Not a best-before eighteen months away. The day it was roasted, printed, every time. It is the number that actually matters.

Light enough to taste the place

We roast to protect origin character, not to cover it. Far enough to develop sweetness and body. Never far enough to taste of the roast instead of the coffee.

Cupped before it is sold

Every batch is tasted before it leaves. The House blend tastes the same in November as it did in June.

02 — The lot

Small lots, named properly.

Producer, region, altitude, varietal, process. All of it printed on the bag, all of it published here. If we cannot name the altitude, we do not buy the lot.

Whole bean by default. Ground to order for a named method — espresso, moka, V60, Chemex, AeroPress, French press. Never ground generically.

03 — Design & materials

A room that lets you stay.

Twenty-four seats. Dark timber, brushed steel, warm low light, hard surfaces softened with textile so the room never gets loud. The bar is low enough to see over, deliberately, so that making coffee is something you can watch. No music before nine.

04 — Who it is for

Made for the early hour.

The early hour

You are awake before you have to be, and you protect that hour. You already know the difference between a good coffee and a convenient one, and you quietly stopped accepting the convenient one.

Wants: consistency you never have to think about.

The regular

Three mornings a week, the same table. The room is a fixed point in the day — somewhere to work alone in company, meet someone properly, or sit for twenty minutes without a screen.

Wants: to be recognised, and never rushed.

The gift buyer

Buying for someone else — a subscription, a bag with a good label, a brew kit. It has to look and feel considered the moment it is handed over.

Wants: effortless to buy, obviously cared for.

Three days in Athens, looking for the good coffee rather than the nearest coffee. Needs to know within five seconds that this is the right room.
